A recipe because I have too many cucumbers and they must go. How about yours?

My beloved farmer is now bringing lots of cucumbers. We typically just shredded them and froze them in sucker bags to use for raita (a condiment of yogurt and cucumbers) when we make Indian food. That works really well mind you , but this year I was craving pickles . Since I am the only one who eats them refrigerator pickles fit the bill . Maybe you have  already made some, but these are easy and truly deliciousmy refrigerator pickles

Instant sweet sliced pickles

7 cups sliced pickles(raw cucumbers sliced thin on a mandolin)

1 cup green pepper (I used a couple of hot wax peppers thin sliced as well)

1 cup sliced onion

1 tablespoon salt

Mix all of the above and let stand 2 hours then drain really well.

In saucepan combine

1/4 teaspoon celery salt

1/4 teaspoon celery seed

2 cups of sugar

1 cup vinegar

Heat all together until sugar is dissolved and pour over drained cucumbers that are packed into jars. Cover and refrigerate and they are ready to eat the next day.
