What a joy to have a man who likes to cook for me!
I love that honey cooks for me. Years back he followed an onion soup recipe and I have been since been begging him to make it again for me. So here is his new and improved version made from the top of his head. This soup thicked with a little cornstarch would also make a beautiful gravy or sauce. Use the ingredients you have on hand , in other words if you don’t have miso or braggs just substitute more salt or pepper or soy sauce. Happy eating.
Onion Soup recipe by honey and it is absolutely lovely
2 tablespoons oil (honey used coconut and olive mixed.)
4 medium onions various kinds if you have them red, white, sweet, yellow
2 large shallots
6 small leeks using the green part only till you cannot seem to cut easily through green part of leek.
all of these thinly sliced above ingredients thinly sliced.
1 medium head of garlic minced
1 cup apple cider
5 cups veggie broth
2 teaspoons or more of fresh thyme
1 teaspoon ground coriander
2 teaspoons dark miso
1 tablespoon dried mushrooms
2 cups sliced white mushrooms
1 tablespoon braggs
1/2 teaspoon red pepper flakes (only if you like a little spicy
salt and pepper to taste
Heat the oil in a heavy bottomed pan. Add all the onions,leeks, and shallots ,stirring occasionally till it starts to brown on med to low heat. This takes about 15 or more minutes and shake in some salt while doing the browning. When the onion mixture is browned it will start to stick but don’t be concerned as the cider will de-glaze the pan for you. Add garlic and apple cider . Stir on med high heat till it starts to caramelize which didn’t take long. Add fresh mushrooms,cover and cook till mushrooms start to looked like they are almost all the way cooked..Add broth herbs and dried mushrooms. Then add rest of ingredients. Lower heat to simmer and cook for about 2 hours uncovered stirring occasionally. Half way you might need to thin the soup with a cup of water. enjoy! We sure did!
