Fall is here and I get back a root cellar book every year
It is fall and every year I get on loan from our wonderful library a book called ‘recipes from the root cellar. Andrea chesman This book is quite a gift when I am facing just too many squashes of various type to even count much less face and leeks, potatoes,carrots,parsnips,cabbages,rutabagas and probably more that I cannot even remember. Speaking of root crops my farmer has assured me that his carrots kept the best over winter by this method. He used a 5 gallon pail with a lid and gently placed his unwashed,not bruised or broken,dented or damaged in any form carrots into the pail and then cover them with crumpled newspaper. Put on the lid and store in a cool place like your old fashioned root cellar. But I digress, back to the book! this book helps you to prepare dinners using of course what is already in the cellar . This week we were doing our applesauce and put it into jars as our freezers are fast becoming too full . I will post a few of the things I do with squash later this week….enjoy this beautiful weather..
