What did we find to eat in our freezer and pantry today? Read on you will see!
Today I was sure that I needed to have broccoli in my life and pronto. So when I woke up the first thing I did was quick thaw broccoli in some cold water. (leave the broccoli in the package while you thaw it) I did some yoga until I realized that had to get the broccoli in the oven or I wouldn’t eat before work time. So I chopped the thawed broccoli into smaller bite sized pieces and tossed them with a drizzle of oil,some garlic powder,salt and smoked paprika. These went into a 500 degree oven for about 20 minutes and with that we had leftover cooked rice, a splash or two of braggs or soy sauce and a dab of peanut butter and it was good okay great, but not much time to eat it after getting yoga finally done it was almost time to work and I had to hurry. Well it still was worth the little bit of extra time. I also made a pan of muffins(that is what took away my time) and I will tell you, that if you use too much squash in a muffin it will kill the taste so that recipe will not appear here, maybe next batch. We ate the muffins any ways so lunch went by the wayside to an early dinner. Honey used his wonderful squash curry sauce that we jarred. To that we added cooked rice (made tonight in our instant pot in 10 minutes) Honey stir fried with a minute amount of sesame oil(our wok that is such high quality that you can cook without oil or water almost all the time
(see post called” we found this great cookware and it is guaranteed for life too” November 5th 2013) ,cauliflower,carrots,onion,mushrooms,and peas. We called that dinner and yes it was great . Took us less than an hour to chop and cook as the sauce was pre-made and ready to go. I made a strawberry rhubarb upside down cake with arrowhead mills gluten free flour blend. This first try with this blend was not too good but I will try it again to see if indeed I was off slightly with my cooking expertise today. Full tummies tonight and music from honey’s abundant collection of albums and we are set to go for a long hibernation this winter.
