Caesar Salad Dressing the kind Vegan’s can eat too!

Recently  I watched a marathon of cooking shows on public television showing how to cook more healthy for2014. Some ideas were just okay , but this one from “Jazzy Vegetarian” is noteworthy I added some twists of my own but I want to give credit where it is due. I think you can see her show on the computer, Italian cooking? So I made it today and yes it is yummy! I will say since I am not used to watching television it gave me a headache to watch TV for so long. Yes the croutons turned out good with gluten free bread. The secret here are the capers. Finally I found a use for those things that never seem to go bad in that lonely jar in the refrigerator but I just had to have …. yes

Caesar Salad or Vegan Yumminess

  1. Ingredients:Croutons
  2. 6 slices of bread gluten free or your choice
  3. 1 tablespoon of Italian herbs
  4. 1 teaspoon garlic powder
Ingredients Dressing
  1. 8 ounces of firm tofu (regular not silken)
  2. 2 tablespoons water
  3. 2 tablespoons fresh lemon Juice
  4. 2 teaspoons of caber juice
  5. 1 heaping teaspoon dijon mustard
  6. 1/4 teaspoon salt
  7. 1 medium clove garlic
  8. 2 tablespoons of capers drained
Vegan Parmesan
  1. 1/3 cupf raw cashews
  2. 1 tablespoon nutritional yeast
  3. 1/2 teaspoon salt
  1. chopped head of romaine lettuce
  1. Mix the seasonings together with the bread: cut into cubes 9 squares per slice of bread bake cubes on a parchment lined cookie sheet for 12- 15 minutes rotating half way so the bread is evenly browned. Remove from oven and set aside to cool.
  1. Break up the tofu into chunks to make it easier for your food processor or I used my Vitamix. Blend the tofu with the lemon juice and the caper juice first to see what the consistency is then start adding water to achieve the right texture. Now just blend in the rest of the ingredients and process till smooth.
  2. Serve this salad dressing over chopped romaine lettuce for best results.
  1. blend in food processor till crumbly like Parmesan , store in the refrigerator .
  1. we use goodbye gluten bread best so far at this posting and can be purchased only at Pick N Save
  2. Tofu is the regular type not silken
  3. capers are by the pickles in the store and the juice is just poured from the jar for this recipe I also add vegan Parmesan cheese salt and pepper over salad and croutons. Yeah
