Winter is here for at least six more weeks… the ground hog….you know all that stuff right?
Kale! it’s what’s for dinner! and for breakfast too! we cook kale, carrots, potatoes,onions, rutabaga with lots of spices all together in my instant pot pressure cooker for our breakfast. It is without any fat ,but well seasoned so the vegetables are able to speak for themselves. This fills us up and still doesn’t put the weight on, what a treat! I might even eat two bowls this morning! yum yum
I am so glad to see little by little that my freezers are starting to diminish in fullness. Now the
only problem is containing my urge to eat too much to help out the “the clean out the freezer” throughout the past spring,summer, and fall months. We are by nature to live in balance with the seasons and our great mother earth. So pull out the root crops if you have them, the kale , the potatoes and onions and create a warming soup or stew with your favorite bread. It won’t be long and our comfort foods will disappear for the spring and summer months. Try new spices and read one more good book, pick a craft project and dream of spring. Hey the seed catalogs are out too! If you are planning a garden that would be great too. Appreciate what is here right now so when the new times come you will be ready for the change. Live in this moment right now. I have seen robins so I know spring is just around the corner.
Note, if you have to buy your produce look for hearty ones that are root crops or that are growing nearest to our state, kale is light and transports well also cabbages,carrots, potatoes,onions. They grow right here in Wisconsin, so what’s not to like , right?
