Just another idea that might be good? Zucchini?
If you have too much zucchini in your garden, try grilling it. I plank the zucchini’s (green and yellow) ,brush them with oil that I seasoned with garlic and seasoning salt. Cook them on each side till tender and crispy. Cool. Next layer them between sheets of parchment paper , freezer paper or wax paper. Bag and freeze. This way I can get out the number of pieces I need for my dish or as a topping(I like these on top of spaghetti, the grilling adds a wonderful flavor to the whole dish). You can also use these planks as the vegetable of choice to go with any dinner entree. It is a nice treat to taste a summer grilled food in the dead of winter. You will be lucky if you get these into the freezer actually because I usually eat lots of them ….This can also be done with eggplant too. Carrots might be nice this way as are rutabaga,beets, and potatoes of course. The choice is yours as far as seasonings go. Grilling food creates a new way to get kids to eat their vegetables, usually the vegetables retain more of their color and crunch. Nothing to loose with this one , it’s August you know, the time to lock your car or a grocery bag of giant zucchini’s will end up in you back seat ….. Yes it has happened to me…….yikes
