Recipe for the new Mexican Dish
Cook two cups of brown rice in your chosen method
3 1/2 cups water to 2 cups of rice ,add a shake of salt . Bring to boil then turn to
low heart and cook about 40 minutes. Check with a fork if water is gone for the most part it will be done.
while the rice is cooking we cooked up some greens (this time swiss chard from our freezer) which were cut into small bite sized pieces. Cook till tender. Then add a couple of tablespoons or more of cream cheese ( we use non dairy) to the cooked greens to melt into the greens.
Take one can of re-fried beans or regular beans ,say pinto or black (we do cook our own beans and season then with taco seasoning )and stir into the greens . Add the whole mixture to the rice or serve the mix on top of the rice for a quick and nutritious dinner. Add the salsa of your choice ,cheese and sour cream if you want and I think we have a winner here. For presentation and because I like color freshly chopped cilantro adds to much flavor and color to this dish. I also add chopped cilantro and the juice of a lime to any salsa ,even my home canned when serving because the freshness makes it outstanding,even with a store bought variety.
