Gluten Free Granola
Oh I am still crunching and yes this is really good. This can be made your own way by adding different nuts and other ingredients as you choose. I used toasted buckwheat because it is cheap and Gluten free oatmeal is not. Buy buckwheat bulk and share it with your cooperative buying club members to save the most . I also used less sweetener and oils or butter than the regular granola.
I would say this will make about 5-6 cups of granola . I would double the recipe as it goes fast. Use this to top the oatmeal or breakfast rice, put into or onto pancakes,in your yogurt or just eat by the handful as a snack. Happy crunching
Bake at 200 degrees about 45 minutes
5 regular unflavored gluten free brown rice cakes broken into bite sized pieces
1/2 cup of your favorite nuts broken or I used toasted and salted sunflower seeds that I roasted my self for less cost.
1 cup of buckwheat(dry roast in a pan till golden)
1/2 regular rolled gluten free oatmeal or quick cooking
1/4 cup shredded or flaked coconut
1/2 to 1 cup of chopped dried fruit of your choice (raisins probably the cheapest)
put all the dry ingredients in a bowl and stir. Make it a large bowl to really mix it good.
Make the coating
1 1/2 bananas
2/3 cup pitted dates
1/4 cup water
1 1/2 teaspoons vanilla
2 teaspoons cinnamon
put these ingredients in the food processor and blend till smooth
melt 1 tablespoon of butter,1 tablespoon of canola oil with 2 tablespoons of honey (I use raw honey) and
1/4 cup of maple syrup ( or use all honey or all maple syrup depending on what you have) stir this in with the mixture from the food processor and pour over your granola ingredients stir well. Pour all of the granola onto two parchment paper lined cookie sheets (parchment paper is 1 dollar at the dollar store a steal)
place in oven. Every 15 minutes stir and rotate bottom pan to the upper rack doing this twice during the 45 minute baking time. Cool then place in air tight container and store where you won’t eat it all in one sitting like i seem to be right now oh well. Live and learn never start eating granola when hungry or when no one is around to see you eat all of it yourself . Karen
