Is the garden overflowing with you rhubarb this spring? The answer is never, just keep finding more recipes to make or enjoy the recipes with rhubarb you already have. Then eat your fill. If you can’t eat anymore then freeze some and save it for a winter pick me up. It will bring the spring time to you in the middle of winter. We make rhubarb sauce, upside down cake, crunch, over ice cream,jam, and even a curry dish and many, many more all with the lowly rhubarb. All you have to do is get yourself a plant of rhubarb or a friend who has too much and is willing to share. Then let it grow. It is ready to harvest in may and till the end of June. To harvest pull the stalk of rhubarb with both hands close to the very bottom of the stalk. Then cut off both the top leaves and bottom of the stalk about 2 inches away on each end to be safe.The top leaves are poisonous.
