What are we eating or plan to eat? Day two of the no spend month round 2
To make things easier and because it stays with us longer, we usually eat a grain ,a bean or protein source and some veggies(typically cooked greens ,kale ,collard,spinach or beet greens) for breakfast. Today was no exception. Rice,leftover sauce and veggies from last nights not so good roll ups with the cooked collard greens.
Since we didn’t cook this weekend I made some egg salad without eggs (will post recipe and mixed it with quiona, then wrapped it in a lettuce leaf. You become inventive when you have lots of lettuce on your hands.
dinner was re-fried beans which I pressure cooked during the day and my honey seasoned them. We ate them with salsa and taco chips while waiting for our wonderful computer guru who makes all this posting possible.
So normally dinner is a much bigger production, but in this case a fast fix came so simply you could do that too. Having a can of re-beans in the cupboard,heat and add some more seasonings. (use my taco seasoning recipe) open a jar of salsa and the taco chips and eat. You could get fancier but hey this was a quick fix necessity. It was delicious and it also means that my dishes also got done before the guru arrived a plus for me! Yeah it’s a good night and now I just learned more computer things. All good Karen
