Recipe just made up-Soup
Sometimes you need to have a kid here to bring a new perspective to your day. Granted ours are grown but even better they are not afraid to tell you what they are hungry for or what they like to eat. Out of this request came a pot of soup with out much rhyme or recipe to speak of and of course it turned out great . Hope you enjoy it too.
3or 4 cloves of garlic minced
one large onion chopped coarsely
a stalk of celery chopped
2 regular potatoes cut into chunks
1 rutabaga cut into chunks (because we have them, so they must go)
a handful of dried mushrooms
2 bay leaves
a few shakes of red pepper flakes
some shakes of 21 saute (trade Joe’s spice) or a spice you might like that you already have in your cupboard
1 cup of chopped green beans (from the freezer)
couple of carrots chopped
some butternut squash (from freezer) cubed probably two round circles from the neck of the squash .
1 jar of home canned tomatoes 1quart
So throw all of this in a soup pot and cook with veggie broth or chicken broth if you wish. When vegetables are tender then Add 1 can of each black beans , canellieni beans, and kidney beans. We also cooked up some Italian soup pasta (or really small pasta and it probably could have just been added the soup pot uncooked ) about 1 cup Stir add salt and pepper as needed This turned out to be very fragrant and yummy and will make an easy meal with what you have on hand and not at all spicy for kids or picky eaters just plain old good.
