Cheddar Rice patties Easy to make and Oh so yummy!

My daughter loved to eat these patties and got quite adept at cooking them herself while she was in college. MIx up the ingredients and let the individual fry their own patties for those on separate schedules. Great topped with sour cream (vegan or regular and fresh chives.

Cheddar Rice Patties

2 cups cooked rice or your choice(we use brown for its extra nutrition)

1 cup shredded zucchini (if frozen drained) optional

1 cup or 4 oz. cheddar cheese shredded (diaya  shredds if vegan)

1/2 cup minced onion

3 tablespoons flour (more if adding the zucchini)

1/2-1 teaspoon salt

1/4 teaspoon black pepper


3 egg whites whipped till stiff not dry with 1/8 teaspoon of cream of tartar

mix first 6 ingredients together then add the egg whites ,folding into rice mixture.

Use 2-3 tablespoons per patty and fry on each side till golden brown.  Top with condiments if desired. Salsa is a possibility too.
