The lazy cooks menu planning! At one point or another that is how we all feel, right?
I have mentioned the other book already by Lorna J Sass ,but this one is also a keeper too. The title “,recipes for an ecological kitchen” is the truly right title. In the table of contents she stocks your pantry in an ecological way, then puts in how to’s of her 3 favorite ways of cooking, then menus (that got me started). Next comes the recipes and of course resources. This is the part I want to share with you, besides having great recipes and ideas, she shares “the lazy cooks guide to menu planning”. That says it all to me. I will give you here what I thought to be some of the highlights. She starts by having you cook a double batch of some sort of bean and then a grain after which she tells you how to make it into different dishes. Say in my world I cook black beans and a pot of rice. We take some of the black beans out to make Cuban black beans and rice a well seasoned dish that stays kind of soupy and has just the right consistency for over your rice. The next day I use some of the beans with vegetables and a dressing for a cold salad. The rice can become fried rice for another meal and the beans once again can become Tennessee corn pone with black beans. The rice is delicious also in exquisite rice salad (many variations on that recipe). Also when cooking ahead throw some of the grain or beans into the freezer to be ready for a magical instant meal of your choice. Make any dishes with this idea be your choice, easy or time consuming they all end up pretty good. She says if all else fails open the refrigerator and see what needs to go stir fry it up in you wok with ginger, garlic and a splash of tamari or soy sauce and call it (insert your title here) .. Why not ? your family just loves to eat and so do I . When the weather is just so great as it is right now, why would we want to be standing in the kitchen for hours cooking. Enlist help is my motto , we all eat, a child or another adult can become your sous chef quickly and with the donning of chef hat and apron could actually become fun. Make the process of cooking delightful and eating a gratitude process.
