This just into my line of vision today. A recipe for making fake bacon. By not using real bacon you get the hit of flavor without the cholesterol,nitrates and what ever else goes into the curing process. Health is wealth. I have tried the eggplant bacon and yes that was okay… I think with fresh eggplant and a mandolin it would better . Any ways back to my original point here. I had mentioned in an earlier post , the new company named “coveganence” out of Madison Wisconsin. Jennie makes up a menu for you vegan of course, weekly with the shopping list and recipe and how to make the prep time even faster. She does send the whole month of menu at one time. So when I got this in my e-mail box today I thought this might be good enough to share. She uses this faking bacon on a “bacon” lettuce and tomato sandwich so it has to be good right? I will let you know I don’t have all the ingredients in my cupboard at this time.
recipe for “Bacon”
2 cups of unsweetened coconut flakes
1 teaspoon smoked paprika
1/4 teaspoon salt
1/8 teaspoon chipotle powder
2 tablespoons maple syrup
Heat 2 tablespoons olive oil in a small skillet over medium -low heat. Add coconut flakes with spices and stir until flakes are coated. Cook stirring frequently for about 5 minutes. Add maple syrup and saute for another 5 minutes until flakes are golden. Done
